Platypus' Not-So-Genuine Texas Holtlinks

Postby Platypus » Wed Mar 09, 2005 6:34 am

Having read Parson Snows thread about Bigwheel's Genuine Texas Holtlinks (see http://forum.sausagemaking.org/viewtopic.php?t=272 ) I thought I'd give it a try.

Unfortunately I didn't have all the ingredients listed so had to modify things a bit :( , however the end results were great so here is my version of the Texas Hotlink, with apologies to Bigwheel :D

1Kg Pork Shoulder
100ml beer
1T ground coriander
1T granulated garlic
2t coarse ground black pepper
2t Cayenne
2t Paprika
1/2t ground bay leaves
1/2t thyme
1/2t Prague#1

Enjoy!

Well no apolgies needed..looks highly edible to me..even though I aint got a clue on the metric stuff. I know a fly weighs about a gram and a fly's turd weighs about a milligram and thats about it. We learnt that in school.
Hope that turned out good for you..sounds like maybe just a little overboard on the Corriander:)
