Meat Balls - fantastic and went down really well. I needed to add more sauce because I served it on a bed of cous cous which soaked up the tomato sauce toooo quickly. However the overall response was very good and I managed to put them out at £3.80 a bowl - many thanks

Correct!

Mushrooms, peppers, chicken, sherry, milk, nutmeg etc

Very nice when made with leftovers as well as cooked from scratch.

Try it with the turky bits at Christmas when you are fed up with all the other turkey combinations :lol:

WW, Good to see things are going well. Did your new paella cooker perform well as expected? Did you make your daughter clean it? Tell her we all think she's pretty cute!

I love chicken cooked in sherry, but have never used milk in it.

Can you elaborate on the milk element please - I fear I may be missing out on something special!

mmm....sherry mushroom cream sauce with a little white pepper and chicken or turkey meat.....served over toast points....delightful.

Hi Chuckwaggon

Yep the Paella went well. I cooked 180 portions in the one pan and almost had to climb inside it to clean it!

Beth my daughter has just got a 2:1 degree for ancient history from her university so we are all proud and as I write she is asleep but not for long as in an hour I am off to cater for the Ludlow in Bloom (flower show) judges and she is giving me a hand - she dosent know it yet, but she is....

Yesterday saw a visit by the Enviromental Health Dept (yearly inspection) and that all went quite well but I still marvel at the tiny tiny tiny knowledge they have abour curing, smoking etc - they obviously live for the rersturant and main manafacture trade - ah well........

Hi Wheels:

Harveys Chicken / turkey / pheasant etc:

for 4

2oz butter
4oz mushrooms
a pepper chopped (sweet)
1.5oz flour plain
3/4 pt milk (or 2/3rs mile and 1/3 chicken stock)
8 - 12 oz diced cookd meat
paprika or ground nutmeg
1 - 2 tbs sherry

melt butter and fry mushrooms & pepper until soft. Stir in the flour & cook for 2 - 3 mins, remove from heat and stir in milk graduly. Bring the sauce to the boil and keep stiring until it thickens. Add meat and season and then add the sherry. I serve this with rice or noodles. It really is very nice.........

It was nice to meet you at the Ludlow market today WW. Your GOS pork pie was very nice. Lovely crisp pastry and a tasty filling.

Can anyone throw asome light on these for me? How can they keep food hot or cold via the 240v system or do you think this is there purely for the light in the box???????

I'm not too sure on this one; but the fridge I use for my curing is a very large 12v in car coolbox - as well as cooling to about 20deg below ambient temp it will also heat food up too, depending on how I set it - I suspect these may be a commercial version thats works on the same principle of the box I have.

Hi Mike - yep thats the one - how do you establish the link?

Speaking to a chum this morning he feels it is somthing to do with heat exchange and at the front of the unit you have a switch that denotes hot or cold.

With the link, all I did was copy the URL from the address bar and paste it between the URL tags to create a link (the URL tags are the last one of the 9 boxes marked B, i, u, Quote, code,List, List=, Img, URL at the top of the text box you type in when replying, click it one to open the URL, paste your link then click again to close it)

All I do with my cooler is insert the power cord 180 degs to change from hot to cold. As I say it is meant for the car, so I run it off a 240V AC to 12V DC transformer. As it has DC going in to it, it will be able to sense the plug direction, and thus heat or cool accordingly. There is no temp control on it; it just runs flat out so I control mine with an electric timer plug to cycle it on or off (thanks to Dr Dave for that suggestion!)
