Has anybody used molasses in bread.I regularly use maple syrup in my wholemeal spelt bread. I was toying with the idea of using spelt,rye,possibly some white with molasses.
Anybody with any thoughts.I know I am odd

Darina Allen, of the famous Ballymaloe Cookery School has a recipe that almost seemed a 'standard' a few years ago. It uses molasses:

I've used molasses for years in rye breads especially. It adds a depth of flavor, and gives you a nice deep color. Goes well with caraway seeds. Also you may want to play with malt syrups or rice syrups.

Thanks a lot Rod I was planning to use in some sort of rye bread Ill see how I go and then try your other suggestions.
