Here are the ribs just before foiling

have you ever prepared ribs without using the foil?

I ask only because so many people seem to use foil just becuase someone else told them they need to, and without ever trying to cook ribs without it.

I also advocate trying meat without injecting, marinating or brining first before venturing into all that extra steps.

I have done them with out foil but they dry out too much. The foil keeps the moisture in and they are crispy on the outside but still nice and moist and tender.

Me too. The ribs were as tender as I wanted but they were always too dry. Went to the foil and now they are fantastic.
