Smokehouse?

I'd certainly consider themostatic control of the heat source - opening vents to control the heat will also let a lot of the smoke out!

met with EH officer today and have had an in principle agreement over construcion and spec. She even understood about build up of carbonised deposits being essential, just that I have to ensure food doesn't come into contact with it.

all systems go!
