This year we did a typical sausagemeat mix (very similar to Wheels' breakfast banger) then added 25% fresh breadcrumb, 5% grated stilton and a generous ammount of port and some fresh chopped sage and parsley and mixed until my hands went numb.
Rolled into large golfball sized balls of about 60g each.
I can already vouch for them being very tasty as I couldnt resist eating some after we had first made them
