kneading with stand mixer question

in the past, i have not kneaded, having used the stretch and fold method with decent results. my wife got me a stand mixer for x-mas. for how long, using the dough hook, should i knead the dough, using the "mix" setting?? this is about a 75% hydration dough. i hope this makes sense.

I knead for 2 x 5 minutes with about a 5 minute break in-between in my Kenwood mixer.

The reason I do two mixings is purely so that I don't overheat the motor.

is that two kneads of 5 minutes each with an intervening 5 minute cool off period??

Yes, or if your machine will stand it 10 minutes - I know others on here who do between 7 and 10 minutes, so anywhere around there and you should be OK.
