I am looking for a good Italian Sausage Recipe that contains fennel. Bon Tasto used to make an excellent one but they have gone out of business. Does anyone have a good recipe?

Franco sells a Special Italian sausage mix on the site.. contains black pepper fennel and a touch of chilli flakes. I read a thread on this forum where someone made them for his Italian family and they liked them. Just a case of finding the thread.

Of couse, that information is no good to you if you want to make your own mix. Try this one

I am not familar with Franco. Is it a brand. Thanks for the information, I am going to try the recipe.

Hi Kathy,

Franco is the chap who runs www.sausagemaking.org, in addition to the forum, the website sells everything you could possibly want pertaining to sausage making. The mix Paul was telling you about on the site can be found here:

the Italian recipes are from page 74 to 77. If you don't have adobe or have any problems let me know and I'll type them out for you ...If I wasn't such a lazy b**ger I would have done that in the first place!!

Kathy,

It was me who mentioned making the Italian sausage from Franco's mix in the earlier thread as mentioned by Paul (above).

We usualy brown them slightly and then cook them in pasata with a little chilli and garlic and serve them with pasta. As Paul said my wife and in-laws are all Italian and they like them.

I just made some Hot Italian Sausage with Rytek Kutas' recipe. It's got fennel, coriander seed, caraway, black pepper, salt, sugar, lots of garlic, and ground Tien Sin chili peppers. I have only tested it on the skillet before it bloomed. Will try some with pasta and on grilled sausage sandwiches with marinara. If the recipe doesn't require any more refinements I'll post it here.
