Finally home and its time for some ribs. 3 racks for $12.00 last winter have been in my freezer calling to be smoked

Prepping and removing the membrane

EVOO and steak spice on the last rack

all wrapped in cling film to take a fridge nap, smoking starts tomorrow

Hi

The Mad Hunky rub... is it any good? I often work in the US, is it a small firm etc or is it available in supermarkets?

Mad Hunky rub is from a guy on another smoking meat web site. He has it for sale. I got it and the Chucksters rub as part of a Christmas exchange. lots of people like it on the Smoking meat.com site

its my first try using it.

Mad Hunky, hahaha I guess we travel in similar circles. Rich is ok in my book , but I don't think he's mad. yet.
