Terry, I use a simple 63%ish hydration dough including 20% sourdough starter (at 100%) and no other yeast which is then aged for 2-5 days in the fridge. Method based on this site:

eg
1000g strong white flour
200g refreshed sourdough starter
593g water
35g salt

Gives a great tasting dough better than any I've tasted elsewhere if I say so myself.

What a brilliant link. Much,much too much to take in, in one sitting, so I have saved it in my favourites so I can read and digest the the whole of the Varosanos link without missing anything. Shall definately be trying the recipe out next time I'm baking

I was watching this video and got an idea to pre cast

I was going to go with brick vault but I aint a fantastic bricky this seemed quite clever to cast perlite and cement ,just need to find a big plastic barrell as a mould.

I already have the door

Good video of a cool looking guy, with an even cooler looking pizza oven. I'm not suprised you want to fasion your design along those lines. that door should set it off nicely.

I hope you don't mind, but googled Discovery coast to see where it is.........google gave me 5 diff. countries and 3 diff. continents?

I wonder if Mark Gadd ever finished his oven(it's his original thread)

The clue is that he picked his Wood stove up in NSW, Australia :D which of your Discovery Coasts does that narrow it down to?

Sorry about the confusion with "Discovery coast" sounds like a really nice place.

Just had another look at your link and that door (and the stove)it looks something else. Would love to see a photo of that door in it's new habitat.....and perhaps a couple of your wood-oven.

I have to build it first

Give me a few months its a bit hot and humid at the moment to do too much manual labour outdoors.

When I start I will post the whole thing start to finish including first pizza.

Snags, If you're going to go the cast route, perlite and cement won't do it.

You need to use the proper refractory cement with stainless needles as a binder.

don't worry about not being able to lay bricks, I have never laid a brick in my life before I built mine and it turned out ok.


Forno bravo have just opened in Australia, and they do a great pre-cast oven that you can just 'glue' together. this might be an easier option for you depending on your budget.

Although i have built my own pizza oven....I have a great deal to learn in this subject.

The people who don't have a construction background seem to excel in this field, and I have seen many wood-oven builds from people in other fields of employment, that have achieved brilliant results from a first time build.

mitchamus.....would you have any pics of your build/finished oven that you could share with us. I for one would love to see your achievements.

Many thanks to all the suggestions from you guys.

2010 turned out to be a very busy year in helping WFO enthusiasts with their own oven builds. In return 15 people shared their builds with us with stage by stage comments and full picture diaries. They were all special but this one turned out to be just a little extra special...
