Hi All - its brain picking time again.........

I would like to do something different as a street food at the shows this year and I wondered if you had any ideas or had seen anything on your travells that you thought quite inventive - yep I will pinch anything!

I intend to put on Chicken Tika pitta breads, game kebabs and veggi burgers at the next do (March the 9th) as well as some of the other popular foods.

I need ideas that I can cook on the griddle and keep hot without loosing the integrety of the product - thanks as always

How about: A barbecued shawarma chicken sandwich

I usually use a wrap instead of a kebab case, but that is my preference.

Markets here are incredibly expensive (the one's I've experienced anyway, and I seriously didn't think that what I was buying, was gvfm (good value for money) so it put me off going back. That's not to say that I don't like the one's that I use in Scotland. Though Ireland had gone through the 'famine' without doubt, myself, family and friends find the Scottish spuds, way better quality and tastier, so that's another bonus for me to look forward to when I go home - yey! :D A local farmer in Scotland that I use when I go home to purchase potatoes, told me that one of his customers switched to Irish. No one liked, so he stopped and went back to the farmer. I think it's very important to get your product right - and know your customer! Best of luck to all.

PS - Home made jams and chutneys - mmmm hmmm. I can't get enough of them. So much so, I make my own.

Thaks for that. I have had a look at the video stream and yep I could easily make up all of that before setting out and serve it simply.

Nice idea about the wraps - will give this a go.

Just a little feed back - tried the wrap as previously discussed and it worked very well. However it is a bit of a faf when there is a queue but if its good its worth waiting for..........

I have decided to do a lot of wraps this year as I always think a burger in a bun is very samey, so this year I will be doing a small range of different foods as per Odlys type of idea, Chicken breast wrap, Rump steak wrap and I am going to try a smoked salmon and scrambled egg wrap (my own smoked salmon of course) all wraps and burgers this year will have salad as well as onions offered should people so choose.

In previous years I have always offered ciabbata bread for the burgers but after one day the rolls do tend to go hard but I will not have that problem with wraps, hence the change. I will still have some rolls though for the die hard burger munchers....... :D

WW, it definitely sounds as though you've got it sussed! :D I wish I were near enough to come and try some of your offerings - they sound delicious! In my neck of the woods, it's generally 'crepes' or some such, which doesn't go down very well with my DH! :(

Just a heads up. Country File is coming to Ludlow Market tomorrow and I have been asked to produce a different sausage for them to film. SO if I dont end up on the cutting room floor which I expect I will, I will try and mention this site and its good works.

Hi WW

Have you thought of having something like this for your catering at events? The smell from the cooking was fabulous. You could even sell off whole birds or joints for folk to take home with them.

I didn't go into the car park to see closely and the hedge in the foreground (as well as the car park being 1 metre higher than the road) meant my view was impeded but - it smelled like it was wood. Similarly, a stall selling sausage baguettes at the St Vaast le Hougue Saturday market were definitely cooking with wood - the smell (& smoke) filled the square - fabulous - about a 1 foot long piece of baguette filled with a thick, cooked sausage for 2.80 Euro (2.44GBP).

Yes packaging is important because some people look the packaging if it is good before they purchase.

Red Kitte and Puffing sausages - well they wwanted somthing unusual!
