Grandpa's Jumbo Polish

I tried and enjoyed Grandpa's Jumbo Polish sausages a couple of year ago posted by Wittdog.
I never bothered with smoking them but now that I have the CSG I'm thinking of having a go.
Would the low smoking temperature of the CSG be o/k for this? if so I wonder how long I should smoke them.

I can't see any reason why you couldn't cold smoke them, then either poach, steam or oven cook them at below 80°C to finish them.

If you plan on cold-smoking them, Please include the proper amount of cure so you do not create any potential problems.
If you plan to cook at a temperature above 200F, cure will not be needed.
