GORGONZOLA. why two lots of milk evening and morn

hi only me again getting along with the cheeses great so far
my questions are The recipes all say for gorgonzola. make up two lots of milk one of evening milk one of morning milk ? thats ok if its from the dairy but if your getting it from a suppermarket and lastly what is the reason for doing this

I don't know the answer, but use of specific milk morning/evening is not mentioned in the PDO registration.

This amendment to the PDO includes a summary of the production process (towards the end of the document) which may be of use to you:
