I agree, Brie is good, also cheddar (strong).

I prefer trout hot smoked, but that's just a personal thing.

White Stilton's a great cheese but sometimes hard to get it it's plain form. It's often dearer than the blue around here because they now add all these different bits to it. Personally, I'm not too keen on it with the added flavourings - but each to their own.

Smoked eggs are fun - they're a "luv 'em or hate 'em thing though".

Real smoked bacon is the business, try it using the recipe for bacon that Jonty posted on your forum. Now I wonder where he got that from?

That bacon did look good. I am going to try the eggs mate, I have just got some chooks and am up for some of that. I presume you hard boil them, do you slice them or smoke them whole ??

I smoke mine peeled but whole for about 6 hours - I've yet to make some into scotch eggs though. Mmm...

...now there's a thought.

I'm sure I did acknowledge sausagemaking.org in my post Phil. I must admit that it's far more satisfying to make up your own cure rather than just buying it pre-made.

I've been using it a while Phil, and I've managed to convert a couple of the chaps into home curing. There's also been a bit of a rush on the CSG's as well.

I'm with you on that, it's just so incredibly simple. The wife usually does a fair bit of eye rolling etc at my various little projects so I'd intentionally stayed away from building a smokehouse with a separate fire box, but even she is impressed with the CSG, well, moreso in the end products.
