I'm not surprised about the sweetness; personally I'd omit the honey/sugar.
Given the hydration (exc potato) of 63%, I'm surprised about it being runny.
I think that instead of making these I may have a play with mashed potato added to my recipe - It'll mean waiting until the main crop potatoes are in though.
