Green Blue cheese?

Green Blue cheese?

A friend gave me a piece of blue cheese from a small cheese maker, but instead of blue veins, it's green. I haven't opened the vac sealed package to taste it yet, but was wondering what gives the mold its color? the starter or time or something else.
To be perfectly honest green cheese doesn't look very appetizing to me.

A picture paints a thousand words... some blue cheeses can be greeny blue, but I'm guessing yours is very green :)

Well not the best pic's but I think you get the idea. The taste test was very very salty.

I agree with Dave - the veins look very much like some of the cheaper pieces of Stilton that we can buy on the local market - I assume that these are cheaper as they didn't make 'top grade'. That said they're superb value and taste no different.

So back to my original question, what gives the mold it's color. the starter, the process or something else?
