So are we saying, go for Lidl and Asda over and above Hovis and Allinsons?

ped, I'm certainly not saying that, what I'm saying is you have the right to choose. If you try and like asda bread flour you should not be put down for it, as it is going to be similar in composition to the locally milled version.

If you like the taste of allisons or lidle bread flour, use it. If you want to pay a little extra for a locally milled organic bread flour that's up to you, IMO.

Thanks Oddley, it was more a question of should I avoid certain brands rather than which one is recommended.

In the past few months I have bought Allinsons & Hovis when on offer and also a couple of the supermarkets own brand at normal price and the results have not been as good as Lidl's.
Allinsons was a close second to Lidl's but that's on results like crumb texture, crust, oven spring etc..
As for taste difference that's down to each individuals palate.

I bought Lidl today I will buy Asda tomorrow.

Lidle v Milled

After the comment about being a flour snob I went on a baking mission yesterday afternoon.

I forced myself into Lidl and bought a bag of flour. Using exactly the same recipe and method I made two loaves, one with the Lidl flour and one from my Claybrooke Mill Stock.

The wife, in a traditional blind tasting test, picked the Claybrooke Flour. In my test, I obviously knew which was which, I found the Lidl loaf acceptable and would use it for work sarnies etc., however I still much preferred the Claybrooke loaf.

I make bread because I enjoy it and make the best I can, experimenting, changing my recipes etc., and the bog standard Lidl/Asda flour would not suit me when I need to make baguettes, fougasse, sourdough breads etc.

Everyone to his own, but if I was going to use Lidl flour then I may just as well go and buy Lidl bread, which works out a whole lot cheaper and less time consuming than making my own.
