Thanks Phil, very useful. I like the look of the Warm Master from Ascotts. I'm starting a stilton this week, and did some paneer yesterday. It's such a long time since I made cheese I've had to read it all up again!

I think I might have to have another go, I keep meaning to and never get round to it. Every time I see that old jar of rennet in the back of the fridge and think "I should throw that away!"
