not sure if phil has posted this somewhere else, but I must draw your attention to his blog and this flippin great calculator.
He has taken a bit of time, I think, to do these out and they are gold.

I have book marked them as I feel these will be invaluable for future reference...well for me anyway.

You'll notice that the calcs incorporate the info that you discovered in your tests - thanks. They've contributed more to our knowledge of brine immersion curing than anything else on here.

Phil, as usual you hide your light under a bushel. If I had the smarts to design something like that I would be shouting it from the hilltops.

You know, if I had something like that when starting out things would have been so much easier for me.

I think this should be stickied for those just starting out and who don't fully understand % etc, this little babay does ALL the work for you.

thanks for answer me i am a cuban people that must leave my country becasue el che and fidel castro elimated forn cuba all the humans rigths now i live in usa but my family are in cuba and afther 51 year of dictadure they can not eat chorizo, dou youknow when i was a child around 1985 i eat my firs t chorizo, later all of this desappear in cuba i started to eat again here on usa, but the best part is that fidel castro family, and che guerava's family eat all that the cuban people cant, they kill my people and my country

A sad story indeed, and if my picture offends you in ANY way I will remove it straight away and of course there is nothing personal taken from you post.

I think myself, comming from a country that has been under British rule for many hundreds of years; until 1922 when we ousted the British out of our country, and then lost the counties in Ulster, and still have british and Unionist rule there, I have a different view of Che...maybe not Fidel so much, I don't think too much about him or his family.
I understand where you are comming from and feel very sad for you having to leave you country...at least I get to stay in mine...although people from my family left Ireland under similar circumstances and indeed I had family members who were involved in fighting the British and were members of the OLD IRA, not the new one you hear about or see on the news.

This for me, and for you is a senstive issue and I feel not best discussed on the forum as politics and religion should NEVER be discussed...in my humble opinion.

I have lots of English friends on this and other sites and have been to England many times and love it there, and the people are very friendly and on this site I have made, I hope, many friends for life....so much so that I feel I could visit them in their homes if I was in their neighboured and would be made feel very welcome.

History is a good and bad thing, every country and religion has its dark days, and its bright days.
My feelings on Che, are more from a view point of the man and his personality and his deep feelings for people that are downtrodden and so on, but he was bigger than that and I know he was very black and white on some issues and could be very cruel too.

I will stop here as it is not a place for discussing political issues. But please know, that I will remove this picture immeadiately if it causes ANY offense at all.

I love Cuba every year for the last 10 year I have a couple of month in Canada visiting my daughter and always have a 2 week holiday in Cuba as its only a 3 hour flight from Toronto.
I have hired a car and travelled around Cuba and the people are the the most friendly I have came across.
Yes the people do not have all the things we in the west take for granted, but they have the best health service in the world and a good education system.
I have visited schools while over there and taken packs of pencils, biro’s books etc and you would think it was xmas.
In my early days when I was a seaman I remember visiting Havana to load sugar, I am talking about 1948 and the Americans were trying to turn Havana into another Las Vegas It was run by the mafia in collaboration with the Cuban dictator Batista who was a right villain.
The mafia boss was a guy named Meyer Lansky a notorious American ganster who owned best part of the hotels and gambling joints.
Havana then was just a huge brothel and casino.
Fidel Castro who was a lawyer and came from a rich family and all he had to do was toe the line and join the corruption.
When the revolution started Mr Batista packed his bags with dollar bills and headed for the US.
I recommend to anyone interested in Cuba to read the book:
Havana Nocture how the mob Owned Cuba then lost it to the Revolution.

Thank you for your post, a sensetive issue for sure and one that should probably come to an end now.

It is all about view points, and history is ALWAYS written by the victor.
There have been many heros / vilians throughout mankinds history and it depends on what side you sit.

Remember Nelson Mandella was in prison for terrorism, Martin McGuinness in Northern Ireland was regarded as a terrorist too...both now seen as diplomats...The Spanish Inquisition acted on behalf of the Catholic Church, racial hatred in 30's Germany was passed in German Law at Nuremburg...the judge who tried the Guilford 4 in England said that he would have them hanged if possible...we all know the outcome of that miscarriage of justice....Bomber Harris and Dresden, some want him to be regarded as a war criminal, over 50 million died under Mao's reign but the chinese still saw him as almost a God, George Galloway wants Blair and Bush to be charged with war crimes...and so on and on and on and on.

All depends on your view point, BUT....we must still all be aware that our personal opinions should be left off the site in an effort NOT to upset those who come here for nothing more than some friendly chat and information on food.


Maybe an end to this part of the thread is in order now and we should return to Phil's great calc...espically designed for lazy buggers like me.
