Howdy folks. The wife and I have been exploring a little Eastern European/Russian deli in town and I've decided I'd like to add this sausage to my repertoire. Has anyone seen a recipe for Karpatskaya?

I made some Internet search on Russian sites. No recipes. This one seems to be what you are looking for: http://russianfooddirect.com/rus/store/ ... em245.html

But what is in them? I asked my Russian wife and she told me that the Carpatian salami is the best. No recipe though. Just tons of garlic.

Yep, my Internet searches also came up empty although I found the same online vendor (English version) of the finished product. I may have to buy some more (darn it!) and attempt to divine the seasoning used.

My wife told me that Carpatian salami isn't eaten whole, it is used as a seasoning because of its spiciness. Whether that is correct is another matter, but it is an interesting thought.

Perhaps there is more than one variety. What I had was very flavorful but not at all spicy.
