Made a batch of these this weekend using Poli's recipe.

I highly recommend these to those who love cold beer and sausage. My plans are to make some more but pickle them with vinegar and hot peppers if I can keep everyone from eating them first.

Pickled sausage, hot peppers sound good. Here is what I do with some eggs, hot peppers and Andouille

Ahh, that's what I'm talking about. I think I'll try that combination and kill two birds with one stone. I'm out of Dragon's Eggs but the chickens are laying again so I think I'm left with no other choice. :lol:

Big Guy, ever made pickled pigs feet or done anything good with the feet? I have a sack of feet in the freezer and I'm undecided on what to do with them.

I've haven't done anything except use them in head cheese, mostly for boiling down to get jelly.

I love head cheese but my doctor would flog me if he caught me eating any. I do also enjoy nibbling on the occasional pickled foot as well. He doesn't like me doing this either. :lol: (but that's why they invented hiding places isn't it?)
