I would repectfully suggest you spend a while reading through previous posts in this forum. You will find that most of your concerns will be in here. I actually spent the best part of 2 weeks reading ALL posts before deciding to take up making my own sausages. Believe me it is well worth the time. Then if you have any concerns you can post here, you will find you will get a fast, professional response with sound advice. This is a superb forum.
