Hi I made some "wheels" rolls today, wheels recipe but with 1 tablespoon sugar and the 110ml of water was potato water.

Put all into bread maker on dough setting, 1 hour later removed and shaped into 4oz rolls.

In the photo top 3 were coated with flour, centre 3 with sesame oil and lower 3 with a mixture of sesame oil and tapioca flour.

Left to prove and then in preheated oven at 180° C for 15 mins, internal temp 80°C.

Not a lot of colour variation, the sesame flavour was nice but not over powering.

These were very very light and the only thing I have done different was using the potato water.

Is potato water - just the water you would discard normally after boiling potatoes?


What does adding the potato water do?

Great rolls though...you cannot escape

I love it when you pull them apart and they are all fluffy at the side...love those rolls.
