Phosphate is availiable in Aus, I've just come back from Perth and kitted out my uncle for making his own bacon and sausages. I got a business card from one of the local butchers for his supplier and i got cure #1 salt peter and phosphate in 500g bags. if your still stuck i can get the company details from my uncle
Save the enviroment, we cant afford to loose more animals, what will we use for variety in sausges, i for one would have liked a dodo banger!
