Living 2 mins from the sea and owning a shrimping net I had no idea how expensive brown shrimp were to buy now,they were always regarded as the poor mans prawn down here.

Good luck on your quest, will get my sons, Chefs, on the case :lol: :lol:

What about ordinary brie and avocado but add some smoked bacon? Not necessarily a whole rasher, a few bite sized pieces.

Fried slices of tofu tossed in a mixture of soy and oyster sauce whilst still hot taste very similar to bacon, especially if you add a dash of liquid smoke. I've never tried them in sandwiches but perhaps they might be worth an experiment?

Hi - yep Im on the scrounge, AGAIN!

Does anyone out there have any knowledge of "pie warmers". I am looking to purchase one for the farmers market and really dont know where to start.

I know that these are new and quite expensive but there may be something similar at secondhand equipment dealers.

Only 5.8 amps so easy to run on generator or possibly inverter for outdoor use, may be worth searching on E-bay but beware Chinese copies.

PS:- As usual anything commercial costs a arm and a leg, the bonus is its glass fronted and I for one can't resist a pie in a cabinet! :lol: :lol:

hi WW have read through this whole post and have to say well done for doing so good with your venture. I am looking to do something similiar with making my own sauages and seling them at FM etc creating a brand and them sell to the shops, i plan on later on making other thinks such as keivs, cordon bleus ect, what i would like to ask is which sausage flavours do you find more popular and do you use ready mix seasoning or make your own fresh? and seen from prev posts you use those pealla cooking dishs do you use those to cook your samples at the FM? or what did you use when you started i was thinking a god size gas bbq maybe, cheers

Thank you fpr your copmments. Ref sausages, I went for a few flavours they didnt sell in the butchers. There is no point in selling a pork sausage at a premium price if every butcher in the town is selling it cheaper and they have had those customers for years! I started with pork and apricot, chicken with sage and onion (use a stuffing) and a game sausage. They sold well and I moved on from there. I only use my own recipies so they cant be replicated also thats the fun part of the process. Ref cooking, yep a bbq would be fine but consider a small portable gas stove or even better / cheaper an electric ring if your stall has power supplied. you can pop a frying pan on that and away you go. You even may consider getting a few locally produced rolls and selling sausage baps made from your own sausages! dont forget to tell the EH about your new venture you will need their seal of approval before you start.

Hi all just to let you know I have now got a pie warmer. I went in the end for a old (ish) Lincat warmer which I found on Flea Bay. It was £100 but I had to pick it up from Cardiff but as that used to be my home town I combined it with family things so no problem there. I have used it on the FM a few times and it will be on the go this Thursday packed with Wild duck, Pheasant, orange and cranberry pasties, The Ludlow Pasty (like a cornish but 65% beef), mince pies and pork and apple sausage rolls - ah the life of a caterer eh :lol:

yeah exactly how i was thinking was going to go for some tasty alternatives, do a few pratice batch trail and error basically. on the FM was going to have a few sausages to attract folks give a little taster hoping them that to lead to interest and sales and also do them in fresh rolls etc im in the process of getting EH to access my kitchen for production purposes, any heads up on what to expect from them? can i ask do u use any of the preseratives at all to lenghten the life of the product? im thinking im going to avoid all if i can and make a high pork % product going for real quality.
