Hey folks,

I am trying to get my hands on some pigs bladders, i have read various places that say they can be sourced salted but cannot find them. Others suggest simply going to an abattoir.

Any pointers on the best route to sourcing them would be most helpful!

Thanks onewheeler, i am actually searching on behalf of my Mum who lives just outside of Aberdeen so US sourcing won't help her out much!

She tells me she has a recipe for chicken stuffed in pigs bladder that she wants to try and asked if i could assist in some web searching as she had so far drawn a blank!

Non of the local abattoirs seemed keen to accommodate so i am going through the list of rare breed farmers to see if they might be able to help. Will update if i find anything!

Might be worth contacting the OP in the pigs bladder football thread as he came from Cumbria, which is a bit nearer than USA.

I think that chicken and truffles in a bladder is one of Paul Bocuse's signature dishes.

Thats the one, Poulet de Bresse cuit en vessie. I think Michel Roux did it on TV recently.

Don't have any at the moment, but am happy to put ypu some aside next time we slaughter. I have tried using them for culatello several times but they tend to split - I suspect culatello is done in a cow bladder rather than pig. But for a chicken dish they should be sufficiently elastic.
