Hi all...had some time on my hands this holiday season..so made some slimjims.....

Mixed and stuffed...

I think next time I will try cold smoking first, then follow up with a hot smoke....didn't seem to have enough smokey flavour.

They look good. Color looks like they picked up some smoke.

I've been meaning to try these but haven't got around to it yet.

Mahogany colored collagen casings.They didn't last long after a few mates dropped by with some beers :shock:
