I don't make cheese, I make cheese better

It finally got cold enough to smoke a batch of cheese this winter in Texas. Here we have gouda, mozzarella, and cheddar. I used cherry wood to smoke them this time.

Depending on the type of wood, I will go from 2 to 4 hours. Cherry is very mild so these went for 3 1/2 hours. They smell great. Now I individually vacuum pack them, as bribes (I mean gifts). 8)

My pit is manufactured by Lyfe Tyme Pits in Texas. I love it as well.

I got this one on a trailer for catering gigs that come up a few times a year on request. We go to a few competitions, but mostly to hang out and cook and down a few brews. I don't think competition BBQ is very good, so I don't try the fancy stuff or cut corners like most of them do.

I'm more of a purist, but mostly I like to light a fire, throw on some meat, and hang out with friends.

Agree on that one. Thats what its all about.

I went to 2 comps last year. Had a great time. I'm thinking about trying a couple this year. My keg travel easy and I think it will be fun. I need to work out my timing though.

It reminds me of Stephenson's 'Rocket' which to you historians out there, won the Rainhill trials in 1829 on the first inter-city railway line in the world (the line is still there, within walking distance of my home).
