chocholate gravy?

My wife met a couple who said that 100% cocoa chocholate was great for thickening gravy.
Any comments?

I imagine it would be, it's very bitter though (for want of a better word). A bit like monté au beurre - monté au chocolat? Be bloomin' expensive though!

Yep. Cocoa, bittersweet chocolate, dark chocolate....all good in savoury stews and sauces. Used that way in French, Italian, Catalan, Spanish, and Mexican cuisines, and some folks even add cocoa/chocolate to chili.

Mole poblano, (chicken in a cocoa/chocolate and chile poblano sauce) is common in Mexican restaurants, here.

I had a great dish of rabbit and prawns with dark chocolate/tomato sauce, and a rabbit stew with bittersweet chocolate stirred into it, while I was in Barcelona.

There is a beef stew with cocoa that I've heard was very good, too.

I've cooked Partridge in a chocolate sauce (spanish dish), it was ok, but didn't blow me away. I think it acted as a 'thickener' and made the sauce richer.

expensive? about £32.00 a kilo
I nearly had a turn but Mrs Wassname purchased some.single bean origin £5.75 for 180gms.
I would have bought 2kg of vac packed pork leg for that.

the beer and chocolate sausage idea is still alive Ive just got a couple more portions of my beer sausage to get through and Ill be away.
I had some bangers and mash yesterday and made an onion gravy with chocolate It was a nice combination.
Maybe thats a better way but Im sort of committed to attempt a beer and chocolate sausage.Will brew the beer in a week or so.
