Sausage containing Sauerkraut and Rice

Postby sfraser71 » Tue Aug 14, 2012 3:54 pm

I custom make sausage for different customers. They found a sausage that they like and it contains sauerkraut, rice and pork. Not sure where to even look for a recipe like this. She said that it was Ukrainin, I'm Ukrainian and never heard of it. I hope someone can help me out. Thank you in advance.

If it was Asian and not Ukrainian maybe it was kimchee, rice, and pork? I think there are a few of those around, and kimchee is basically just sauerkraut.

I caught my first fish at Moosomin. It's nice country.

Was it a fermented sausage?

That is cool. I'm really not sure, she didn't give me much too go on. I might phone the coop and see if they will give me any information.

You could try Krautswurst and add 1/2 pound of cooked and cooled rice.

No idea if the seasoning is close to the Ukrainian version; it was just the only sausage I could think of with sauerkraut. Let us know what you find out. Welcome to the forum. :D

Thank you for sharing the krautwurst recipe. My customers really liked it.. My children loved it and really hate sauerkraut.

Thank you.

I'm glad that Len Poli's recipe worked out; his collection of recipes is large and reliable. What types of sausage do you usually make?

Was it salt sauerkraut or vinegar-wine?
