Sweetbreads

Postby Shaun » Tue Oct 05, 2004 6:19 pm

Anyone know where I can get sweetbreads from. I went to my local farm shop today and the lady said that they no longer send the sweetbreads back from the abbatour due to the foot and mouth crisis a couple of years ago.

Ahhh-what do you mean by sweetbreads? Do you mean stones (testicles) or throat breads?. Lamb stones are best early in the season when the lambs are 3 to 4 months old and before they are sexually active.
The throat breads come off the pluck and are the thyroid gland and are delicious- niether of these things are restricted for sale-you just need to ask the right people. As far as I am aware, nothing was banned from sale post fmd. Certain beef cuts are now classified as Specified Risk Material due to BSE, and are more dangerous than fallout to handle (according to the powers that be)

Only the other day I saw a chap on tv who made his own black pudding - and had sweedbreads in there, so when you sliced it, you had this big chunk of sweetbreads interspersed in the pudding. Sounds delicious.

Andy
Cheers for the info I will do some asking around.

Aris
This was what I wanted them for, the first time I heard about this was by a chef called Paul Heathcote and thought it sounded good. If can can get hold of some sweetbreads I will try it and let you know the outcome.

I suspect you need to go to a 'proper butcher' and he may need to order them specially.

Hi
Don't know if this is any help but years ago I used to get frozen New Zealand lamb sweetbreads from I think Weddle Swift meat wholesalers, never tried them myself so not sure on quality just a thought that's all.

Cheers,

Rob
Do you have an addy for them as I still can't get hold of any . fresh or frozen will do. tried local butchers and also internet butchers but to no avail, being just a meer punter dont think I could order from an abatour. Any Butchers out there that would post them to me I would be most grateful and would pay the going price and postage.
