Smoked Kokenee Salmon Pies

Hey hey, after seeing Brican's seafood pie recipe, i had a hankering. As it turns out the Kokenee Salmon (a fresh water salmon related to sockeye i think) happen to be "running" in the local river.....so went down with a pole and snagged around 40 of em......

here's the little buggers after a 7 min brine....waiting for the mysterious "pellicle"

off to the smoker.....(i was bored and found out my phone has special effects)

After a few hours of smoking.......

And more time to strip the white meat....

The fish has a lovely smokey aroma that I think will work well in pies. My wife & i aren't enamored by fish in general, so I'm always looking for ways to "disguise" fish in our diet....

I was then thwarted by the local grocery store being closed and I had no frozen peas & carrots.....hmmmm ......

awright....after the slight ingredient hiccup yesterday was rectified.....time to make pies!! :shock:

Fish mixture in pie casings heading for the freezer.....top with mashed potatoe tomorrow......

Fresh from the freezer to be topped with mashed potato and a smattering of shredded cheese.....

All in all this was an enjoyable experience. The smoked fish mixture tastes great and am looking forward to baking some tonight. 8)

It was however a lot of effort to make 14 pies...which if you have time on your hands is great, i would make these a once a year project.
