The River Cottage meat book, nowt realy about sausages but worth a read and makes you think more about the meat you buy, where its from how its reared etc.

Agreed. I was given it as a present recently. Definitely a good read; a few good recipes but more interesting as an insight into HFW's morals, views and opinions on the subject.

Hi

I got the book the other day, the curing bit is confusing for the beginner that first views this forum on the role of nitrates/nitrites. I see his salt petre is optional? And he keeps refering to the original book, which I don't have. Still I am the Emelda Marcos of recipie books. Any thoughts on posting items for sale/wanted?
