I got my answer so you can take the post wherever you like! I'm gonna grab some sheep casings between work this week and I'll update with some pics and such when I make the sausage.

Sorry to be so late to the party!

The fat normally used is lamb tail fat, but I doubt that it is widely available outside the Middle East. As to the wine, there are many Muslims in the Levant, and in the Middle East in general, who will accept some limited use of alcohol, there is none left in the sausage by the time it is cooked! But it varies from person to person regarding their acceptance.

I hope the sausages were not a dissapointment!

I didn't know that about the alcohol. I assumed that it was forbidden for all muslims.
