Well a mate of mine dropped around a bunch of goat stew meat the other day wanting me to make some sort of sausage out it. After scouring the interwebamjig, I came up with this concoction. (which is loosely inspired by the Vietnamese Nem Nuong)
Asian Inspired Goat Sausage
2lbs of Goat
1lb of Beef
1lb of Bacon
1 Egg
1 Carrot
2Tbsp x Lemon Grass Paste
1Tbsp x Mined Garlic
2 Tbsp x Cilantro Paste
4Tbsp x Fish Sauce
2 Tbsp x Lime Juice
1/2 Cup of White Wine
1Tbsp x White Pepper
1Tbsp x Hot Red Chilli Flakes
Grind partially frozen meat and bind with spices. Stuff into sheep casings.

Stuffed, linked and drying
Sample fry up
Had some left overs as I didn't soak enough casings so I made some meat balls for tonight to go with some home made tomato sauce.
I really liked the flavor, the fish sauce adds all the salt you need and the herbs really shine.
I doubt I'd change much, maybe grind through a finer plate...maybe not.
