Cornish Yard Birds

Had some time on my hands so decided to do a fancy Sunday dinner.....

It all started with a couple of chicks lounging around.....

who accidentally fell into a pot of brine....

Jumped out and rolled around in some dry rub....

And finally snuck into my smoker to warm up....

This is when I found them and thought waste not want not...served with Bacon & Cheese Hasselback potato and garlic grean beans..... :drool:

This was really my first foray into the American way of BBQ..i.e. brines, rubs etc. I brined for 5 hrs, rinsed and dry rubbed for 4hrs, brought back to room temps and then smoked over apple chips for around 2hrs. Due to ambient temps my smoker wouldn't get over 275F so i was worried about the skin being rubbery. It wasn't as crispy as it could've been but was acceptable. The meat was amazing :shock: It was tender, juicy and full of flavour. Possible the best bird I've ever made. I'll be exploring this method of cooking more.

Thanks, the hasselbacks got my motor running, I'm trying out a sausage, pepperoni & bacon stuffed potato bomb version to see how it camp cooks by clumsy cubs, ..doesn't really get simpler if it's a result.

The Hasselbacks were good...I used home made maple bacon. My only correction would be to cut the bacon smaller. (i.e. not to poke out above the potato slits). It got cooked a little to much for my liking. The bacon was overcooked. Maybe if using store bought bacon it wouldn't cook so much.

You are 1000% correct Phil. Please dont subject me to the wrath of Brican & Vagreys :D I should've said to trim the home made maple bacon to size.

As much as I know about bacon is as much as I know about cricket ---- luvly game it iz if I say so myself :wink:

I asked my butcher if I could get that cut of pork and he basically told me that I would need to buy a half hog and cut it myself.
