My first sausages!

My first sausages!

The hog casings arrived in the post yesterday so I whizzed up some breadcrumbs, got the mincer attachment fitted to the Kenwood, minced up a kilo of pork shoulder and belly (70%/30%), then used a couple of recipes I came across on here for inspiration.

And here we have it: 3 breakfast and 4 stout (made with homebrewed oatmeal stout).
ImageWell the first of the stout one is more of a breakfast as I didn't clean through the filler- I had used all the bread in the mix!

The stout ones are perhaps a little overfilled? The casings didn't seem to come of the horn as easily as with the breakfast ones I did first.

I'm out tonight so relying on the feedback from my wife who'll try the breakfast ones for dinner tonight!

Thanks Dan. It was certainly satisfying linking them, though I'd admit to being a little apprehensive when I started, I guess it's the same when doing anything new. I'll be sure to report back.

They look fine Jabba; it will soon be routine. If the casings have started to dry out on the stuffing horn they might start to stick. The horn can be put in a tall glass of water to rehydrate the casings.

This is my second attempt at sausages. The first was a learning exercise and didn't go too well but tasted OK.
