Not a recipe but an ingredients list if that helps get you started:
Turkey, Chicken, Sun-Dried Tomatoes, Salt, Spices, Garlic, Basil, Sodium Nitrite, in a Pork Casing

i've just found this recipe,
-lbs ground pork
3/4-lbs whole milk mozzarella, cut into cubes
1-bunch Italian parsley, finely chopped
6 -oz sun-dried tomatoes in oil, coarsely chopped
1-tbsp dried basil
1-tbsp fennel seed
1-tbsp coarse black pepper
1-tbsp salt
1-tbsp ground coriander
-cup dry white wine
Mix all seasonings together with wine
Mix the seasonings with the ground meat and cheese
Stuff into casings
Not sure about the cheese, may be more like a pizza sausage. I'll try a small batch both with and without cheese and see how they turn out

made some lastnight, tasted very odd, more of a moroccan taste, now replace the fennel seed with oregano and you have a ham and tomato pizza sausage!! not really a dinner or sandwich sausage but they would be ideal served as chippolatas on a buffet or sliced and served in a tomato sauce with pasta.
I cant get my photos to upload, tried photobucket, flickr and anotherone that i cant remember the name of.

We have tried the sun-dried tomato mozzarella recipe and think it is great. It is now one of our favourites.

I was reading one of my books that said if you wanted to make a tomato sausage you can start by replacing the water in the recipe with tomato juice.
I don't know if that helps but it sounds worth a shot.
