Christmas Sausage

When I was a kid, a great number of years ago, one of the local butcher shop owners would prepare a specially spiced breakfast-type of sausage for sale during the Christmas season. Now I'm making sausages, a novice, I whish I knew what the spices were :( , but I can't think of what they might have been. Anyone have a recipe for what could be called Christmas sausages? or a suggestion for spices that one might use?

Classic Christmas spices that come to mind are cinnamon, nutmeg, allspice, cloves, orange zest. Not sure what they'd be like in a sausage though.

I'm taking a guess here, but if I were making a christmas sausage, i'd use similar spices and ingredients as I would with stuffing.

Some people over at http://www.sausagemania.com/index.html had a recipe for an Alsatian Christmas sausage that seems interesting, though I'm not sure if it's what you're looking for. I guess that it stands to reason, to tase Christmas-ee it should contain some of the spices associated. I think I'll try the recipe over on the SausageMania site. I'll let you know! :)
