Christmas Sausage

When I was a kid, a great number of years ago, one of the local butcher shop owners would prepare a specially spiced breakfast-type of sausage for sale during the Christmas season. Now I'm making sausages, a novice, I whish I knew what the spices were , but I can't think of what they might have been. Anyone have a recipe for what could be called Christmas sausages? or a suggestion for spices that one might use?
