Many thanks, they're what we know as Kilner jars - also after the name of the manufacturer.

I got curious, and looked it up. A man named Mason patented the idea in 1858. When the patent ran out, Ball started to produce them in the US, and later Kerr. In the UK, Kilner, and in Canada a company called Bernardin.
Apparently before that, they either used wax seals, or wire-bale jars.
