Polish Pork Ring. Anyone got a recipe

Postby Vernon Smith » Mon Mar 27, 2006 9:05 am

Many years ago I tasted a sausage my uncle called Polish Pork Ring. It was about the same size and shape as a traditional English black pudding. It was absolutely superb either boiled or eaten cold straight from the skin. I can't find a recipe anything like it on the forum. Any ideas please, expecially any Polaks out there. My uncle used to be given it regularly on visits in the 50's to Polish friends around Northolt Middx. where he served 1940 to 1944 at RAF Northolt alongside the Polish aircrews that were stationed there. Any guidance would be appreciated
thanks.

Vernon

Could it possibly be a Kielbasa?? If so there is a recipe on Len Poli's site http://lpoli.50webs.com/index_files/Kielbasa-fresh.pdf

It sounds like it may be cerdelova (Polish trail bologna). Is it formed in a tied ring using beef middles?

There are too many Polish sausages that are made in a form of a ring (Polish Smoked Sausage, Mysliwska, Kaszanka, Pasztetowa, White Sausage etc) to answer your question. There are some original classical Polish recipes at the following link:

http://www.wedlinydomowe.com/recipes/recipes.htm

If you click on Polish site you will find a few hundred more but in Polish.

Hope it helps.

Seminole, that is brilliant, I had had a browse round that site, but never noticed the button at the top.
Ooh it has recipes for all my favourites oh, smoked chicken yum! Ooh in paradise now. Making cured polish sausage was what got me interested in sausage making to being with.

btw Kielbasa is the general word for sausage
