Best Christmas sausage recipie?

Hi all,

Got a day off next week to sort out all the bacon and sausages im making for christmas, and apart from making a shed load of chilli willies for everyone I wanted to make a good christmas sausage for either stuffing or pigs in blankets or both.

I have had a search here and looked on lens site but wondered what everyone does for christmas.

Cant wait for next week....... just me and my meat waiting for a good stuffing. ........ Hmmm that didnt come out right! :oops:

I make a Christmas sausage using venison, with added cranberries (optional, I have made them with and without), orange juice, orange zest, powdered cloves, ginger, nutmeg and cinnamon. Very seasonal flavours, but be careful with the orange zest, it can easily become overpowering.

I just made Paul Kribs' Yuletide sausages. Very tasty. I agree with Heather - watch the orange.

Incidentally, bfddg, I have tried both white and collared, and found no discernible difference, so use what you have to hand!

I find turtles are better and if they come shell on so much the better...
